Banana & Blueberry Baked Oatmeal

Serves 4


  • 1 cup gluten free porridge oats
  • Enough boiling water to cover oats
  • 2 tbsp. cinnamon
  • 1 cup frozen blueberries
  • Handful crushed walnuts
  • 1 chopped banana
  • 3 tbsp. almond milk


Pour oats into a large bowl and cover with boiling water. Let stand until oats have absorbed water. Add cinnamon and stir, then add frozen blueberries, walnuts, chopped banana, almond milk and mix all together. Pour mixture into a baking dish and spread out. (optional, top with half a banana). Bake at 180 degrees for 20 mins. Test with a knife and if it comes out clean the oatmeal is ready. Allow 5 mins to cool and bon appetite.

The oatmeal will keep in the fridge covered for 2-3 days.
