Coconut Roasted Sweet Potato with Spicy Avocado and Tomato Salsa

This is one for the grown-ups. It is packed full of flavour, fibre and vitamins, especially Vitamin A which is good for vision, skin and bones. Visually this looks amazing so if you want to impress someone, treat someone or just cheer someone up, this is a lovely idea.

Ingredients

  • One medium Sweet Potato (peel and slice into disc shapes)

  • Tbsp. coconut oil

  • 1 ripe avocado

  • 1 tomato

  • Juice of ½ lime

  • Sprinkling of chilli flakes or fresh chilli (optional)

Directions

  1. Pre-heat oven to 180C.

  2. Massage coconut oil onto the sweet potatoes.

  3. Place sweet potatoes on a baking tray and bake for 25-30 mins.

  4. In the meantime, dice avocado and tomato and mix gently in a bowl

  5. Add the lime juice and chilli.

  6. Remove sweet potatoes from oven and spoon avocado mix on top. 

  7. Best enjoyed warm.
