Sweetcorn Fritters with Guacamole

This recipe is for when you haven’t been to the supermarket and you’ve nothing left in the fridge except for some random ingredients. This is when you become a dinner time hero! With very little effort you can transform a few simple ingredients into a major crowd pleaser in less than 15 minutes. Feel free to funk it up a little by adding other ingredients such as chorizo, peppers or tomatoes etc.

Ingredients (Makes 8-10)

·       300g sweetcorn, defrosted

·       2 sprigs of spring onion, finely chopped

·       3 eggs 

·       30ml milk 

·       75g plain flour 

·       ½ tsp. cayenne pepper

·       oil for frying

·       freshly ground black pepper

Directions

1.       Start by putting the sweetcorn and spring onions in a bowl. 

2.     In a separate bowl beat the eggs and milk together and then pour over the sweetcorn and spring onion.  

3.      Sieve the flour and cayenne pepper into the sweetcorn mixture and stir.

4.     Add the oil to a large frying pan. The base of the pan needs to be well covered in oil (Adult supervision)

5.      Using a small ladle or a large spoon, drop batter onto the oil – you need around 2 tbsp. of mixture per fritter. You should be able to fry 4 at any one time on the frying pan. 

6.      Fry for 2 minutes on one side until light brown then carefully turn over and cook for a further minute.

7.      Turn out onto kitchen paper to remove any excess oil and keep warm in a low oven. Continue until you have used all the batter.

 

Guacamole

Ingredients 

·       2 ripe avocados, halved and destoned (adult supervision)

·       4 tbsp. fresh coriander leaves, chopped

·       1 tbsp. lime juice

·       1 medium tomato, chopped

·       ¼ tsp. Cayenne Pepper (if you like it spicy)

 

Directions

1.       Remove the avocado flesh from the skins with a spoon and put into a small bowl.

2.     With a fork mash the avocado until mushy.

3.      Then add the coriander, lime juice and tomato and mix together.

4.     Serve immediately.
