Jack O’Lantern Stuffed Peppers

Ingredients

  • 4 large bell peppers (any colour)

  • 100g couscous

  • Vegetable stock = 125ml boiling water & ½ stock cube

  • 1 tbsp. extra virgin olive oil

  • 1 tbsp. lemon juice

  • 6 cherry tomatoes, diced

  • 1 small red onion, diced

  • 50g frozen peas

  • 50g frozen sweetcorn

  • 50g mozzarella cheese (for topping)

Tip: Try different fillings like leftover bolognaise, taco mince, rice or noodles.

Directions

Get ready: Preheat your oven to 180°C.

  1. Prepare the couscous: Pour the couscous into a heatproof bowl. Add the hot vegetable stock and a drizzle of olive oil. Cover and let it sit for 5 minutes until all the liquid is absorbed.

  2. Fluff it up: Use a fork to fluff the couscous so it’s light and airy. Add in the lemon juice.

  3. Prepare the veggies: Dice the onion and add it to the couscous along with the tomatoes, peas and sweetcorn.

  4. Prepare the peppers: Cut the tops off the peppers and scoop out the seeds and white bits inside.

  5. Ask an adult to help you cut out triangle eyes and a mouth — just like a Jack-O’-Lantern face! 🎃

  6. Stuff the peppers: Spoon the couscous mixture into each pepper until they’re nice and full.

  7. Sprinkle mozzarella cheese on top of each one.

  8. Pop the pepper tops back on — like little hats!

  9. Bake time: Place the peppers in your dish and bake for 20–25 minutes, until the cheese is melted and the peppers are soft.

  10. Carefully remove from the oven (ask an adult for help).

  11. Let them cool a little, then serve your spookily delicious Halloween dinner. 😋
