Mini Chocolate Courgette Cakes

Ingredients

  • 125g plain or whole wheat flour

  • 2 tbsp. cocoa powder

  • 1 tsp. baking powder

  • 1/2 tsp. baking soda

  • 100g brown sugar

  • 1 egg

  • 120ml milk

  • 60ml light olive oil

  • 1/2 large courgette (about 130g), grated

  • 1 tsp. vanilla extract

  • Chocolate chips (optional)

Directions

  1. Preheat the oven to 180°C fan. Line your muffin tin with liners.

  2. In a large mixing bowl, whisk together the flour, cocoa powder, baking powder, and baking soda.

  3. In another bowl, mix the egg, oil, milk, sugar, and vanilla extract.

  4. Add the wet ingredients into the dry ingredients and mix gently until just combined.

  5. Fold in the grated courgette and the chocolate chips.

  6. Spoon the batter into the muffin liners, about 1/2 full, remember these are mini!

  7. Bake for 20-22 minutes or until a table knife inserted comes out clean.

  8. Cool for about 20 mins.
